Quick savouries for New Year

You need:
1 packet frozen puff pastry, thawed

and anything from the list below that you fancy:
Anchovies
Parmesan cheese
Strong cheddar
Chutney
Chilli paste
Tomato puree
Olives, stoned

Oil the baking tray and place the unrolled puff pastry on it. Make tracks lengthways for different fillings:
Pulverise the anchovies or olives in a pestle & mortar and spread a thin layer down the track. Make a thin layer of chutney or chilli paste or tomato puree down another track and sprinkle with both cheeses. Make any combination you like. When tracks are filled, roll carefully from both ends until they meet in the middle, then separate into two rolls. This will ensure that they are a convenient bite-sized snack. Let them rest in the fridge for half an hour before slicing about 5mm thick with a very sharp knife. All this can be done on the same baking tray to minimise cleaning up. Pop into the top of a hot oven (220 deg C) for 12 - 15 minutes until golden.

Can also be topped after cooking with caramelised onion.


In the unlikely event of there being any left over, store in an airtight container.

Purpose of this blog

For many years, I have been wanting to make a recipe/kitchen hints and tips/general info kind of book, and this is the start of this project. I will be posting favourite recipes, new attempts at culinary delights, disastrous don't dos, things that make the kitchen a friendlier place and hopefully providing all-round practical good sense in a simple yet entertaining format.

Let's get out those pots and start cooking!
